Clever Dripper is way, way easier than a V60 or Chemex. It's essentially just following directions rather than having a specific technique developed. However, you can mimic a Clever Dripper with an AeroPress, and if you don't need the extra volume of coffee, you're good.
Here are some more specific recommendations for exactly how I use the brewer. Step 1: Put the paper filter into the dripper. Step 2: Add coffee into the filter. Step 3: Add all the water at once and cover, wait 1.5 minutes, then lift the cover and stir to fully mix the grounds and water.
Today, the Hario V60 is their signature drip brewer. Its name cleverly comes from the coffee brewers' V shape and the 60-degree angle of the sides. You can buy it in a range of sizes, made from all kinds of materials to suit you. But the design remains the same, as does the skill and practice required to make the perfect Hario V60 coffee.
They have very different shapes: V60 Filter vs Melitta filter. The Melitta dripper is loved because its so cheap and can still give a quality cup assuming your beans and grind are decent. It has a tiny hole versus the larger hole in the V60. This means that it controls the rate of coffee flow and you cannot do as much to control it.
I 2ould either go with the Hario Switch/Clever Dripper or just the V60 (a V60 kit is like £30). I've come from French Press to the Aeropress, and have really enjoyed the V60, take a few goes to get used to it but it's fun and worth it imo. The 03 Switch is my everyday brewer, and I take the Clever on trips because it's less fragile and filters are easier to find if needed. The nice thing about the 03 size is that I can brew a 450g cup that perfectly fills my 16oz hydro flask. And during the warmer months I'll brew 400g over 200g of ice to make a total of 600g of iced coffee.
Great during rushes when the tickets are mostly espresso based menu and there's a guy ordering a V60. I use 1:15 ratio, 16gr of coffee, bloom using 50gr of water with the switch closed for 45 sec.. release the switch and let the water flow down At 1 minute mark, close the switch and brew to your desired ratio and open the switch in between 3.00
